Chicken Pesto Pasta

This week You! collaborates with Chef Naim, Executive Chef at Avari Towers, Karachi, who shares the recipe of ‘Chicken Pesto Pasta’ from its famous Italian Nights every Thursday at Asia Live. Take the stress out of dinnertime with this easy Pesto Chicken Pasta and enjoy! IngredientsPenne pasta 1 lbChicken breasts 1 lbParmesan cheese 1/4 cupBasil pesto 11/2 cups Sun dried tomato (chopped) 1/4 cupSpring onion (coped) 1 tbspBlack pepper (ground) 1/2 tspSalt 11/2 tspMethodCook the penne pasta according to package instructions. Set asideFlatten the chicken breast by gently pounding using a meat tenderiser. Rub salt and pepper on the chicken breast. Let it stay for 10 minutes.Grill each side of the chicken breasts for 5 to 7 minutes. Let the meat rest for 5 to 8 minutes and then slice into thick strips.Combine the cooked pasta, sliced chicken breast, pesto, sun-dried tomato, and Parmesan cheese in a large mixing bowl. Toss until all the ingredients are well incorporated.Transfer to individual plates and serve with garlic bread.
