Chicken & Cheese Quesadillas

This week You! features the recipe of chicken and cheese quesadillas with flat bread that is sure to make you happy!IngredientsWheat flour (sifted) 2 cupsSalt 1/2 tsp or to tasteGhee 1 tbspWater 1/2 cup or as requiredOil 1-2 tbspChicken (small cubes) 250 gramsPaprika powder 1/2 tspCumin powder 1/2 tspSalt to tasteRed chilli powder 1/2 tsp or to tasteGarlic powder 1 tspEggs 4Tomatoes (deseeded & small cubes) 2 tbspCapsicum (small cubes) 1 tbspFresh coriander (chopped) 1 tbspCheddar cheese (grated) as requiredMozzarella cheese grated as requiredMethod In a bowl, add wheat flour, salt, ghee and mix well. Gradually add water and knead until dough is formed, let it rest for 15 minutes. Grease your hand with ghee and knead dough again. Take a small dough and make a ball. Sprinkle flour on working surface and roll out dough. Heat griddle and cook dough from both sides until done & set aside. In a frying pan, add oil and chicken, mix well until it changes colour. Add paprika, cumin, salt, red chilli powder and garlic powder, mix well and cook until chicken is done & set aside. In small jug, add eggs, tomato, salt, capsicum and fresh coriander; whisk well & set aside. In frying pan, add oil and spread it. Add egg mixture, cheddar, mozzarella cheese and cook for 1 minute. Now, make flatbread by greasing with oil and flip carefully. Add the cooked chicken mixture onto flatbread and slightly press it. Cover and cook on low flame for 30 seconds. Then add a cooked flatbread, cover and cook for 1 minute. Repeat for one more layer. Cut into pieces & serve.Courtesy: Food Fusion
